My real estate agent, and my baby sitter are going to see the Dave Matthews Band & Sheryl Crow at Fenway. (Not together mind you.) I am not going. It occurred to me that these people have a lot of my money.

Ice Box Cake
(recipe courtesy of Nana Ash, may she rest in peace and always watch over my cooking.)
1 box of chocolate instant pudding
1 box vanilla instant pudding
Graham crackers
Mix individual puddings per directions and let stand to thicken.
Line the bottom of a 9 x 9 pan with graham crackers.
Spread one flavor of pudding. (I prefer the chocolate on the bottom layer for whatever Freudian aesthetic reasons.)
Cover with another layer of crackers.
Spread the other flavor of pudding.
Top with more crackers.
Cover and chill for a few hours until crackers are soft.
Serves 9, 4, or 1, depending on your menstrual cycle.

Can I tell you that this sounds like the best comfort food around? And I'm not PMSing. I will try it and report! :)
That would be one serving, jealously guarded by a snarling, PMS-ing Dancehall.
I think there is an eclair recipie like that that uses the vanilla puddingm the crackers and you top it off with a melted chocolate-type thing on top.
Another version is put sliced bananas between the puddings and top with cool whip! I make this for every occassion, the family loves it! I always use sugar free fat free pudding and cool whip, no one knows the difference!
