Recipe time!

Only 2 pts per serving girls. (2/3 cup) I'm bringing it to a Fourth of July BBQ.

Confetti Lentil and Brown Rice Salad

2 cups cooked brown rice
1 cup cooked lentils
2 carrots chopped
2 green onions sliced
1/4 cup grape or cherry tomatoes halved
1 stalk of celery chopped
1 tbsp each chopped fresh basil and oregano

dressing:
2 tbsp balsamic vinegar
2 tbsp olive oil
juice of 1/2 lemon
salt and pepper
(all to taste really, I'm guestimating what I did)

Mix well, let chill for 2 hrs for flavors to blend.
